The Dietary Manager/Executive Chef oversees the daily operations of the Dietary Department, while maintaining budgetary guidelines and food quality. Ensures excellence in resident service and satisfaction and compliance with all applicable regulations with regard to food safety and Department of Human Services guidelines.
Essential Functions/Job Duties:
- Supervises dietary staff, finds coverage as needed, assists in staff scheduling as needed.
- Orients and trains dietary employees; supervises day-to-day operations of kitchen and dining room.
- Works with Director of Human Resources as needed regarding hiring and terminating employees; issues disciplinary notices, as needed.
- Manages inventory of food and supplies; ordering supplies and food to maximize cost effectiveness, ensuring that par levels are maintained.
- Leads staff in exemplifying excellent customer service to residents and other departments.
- Completes evaluations with dietary employees at quarterly and annually.
- Develops and implements cleaning schedules to ensure a sanitary environment.
- Maintains safety and health rules and protocols related to OSHA & CDC regulations and Cardinal Senior Management Standards as required.
- Ensures the posting and updating of required documentation (diabetic list, special diet needs, etc.) on a regular basis at appropriate locations.
- Monitors and ensures that necessary items are covered, labeled, dated, rotated, and maintained in a safe, organized and systematic manner.
- Monitors completion of all necessary records with regard to refrigerator and freezer temperatures.
- Ensures the posting of menus according to regulations, including making sure changes are communicated to residents, per state requirements.
- Solicits input from residents with regard to food service, quality of food, and any other issues or concerns.
- Communicates problems and suggestions for improvement to the Administrator in a timely fashion.
- Functions as a Cook or Dietary Aide as needed to meet the needs of the building.
Requirements- Specific education, certification, and licensure:
- High School Diploma or equivalency.
- Familiarity with kitchen equipment, including steam tables, slicers, etc.
- Experience in kitchen sanitation and hygiene.
- Ability to perform tasks such as calculating, ordering, filing, and writing.
- Ability to effectively supervise all dietary staff, as well as PCAs while they are serving in the dining room
- CDM or Associates Degree in Culinary Arts is preferred, but not required.
- Minimum five (5) years’ experience in food preparation and budget experience preferred.
- Basic computer skills for data entry.
- Must be able to lift up to 50 pounds.
