    Summary : To assist the F&B Director with managing customer service, controlling costs, and maintaining highest levels of service in Restaurant, Café, Lounge, and Room Service.

    Understand sales goals, assist with budget, and plan and execute daily and weekly workload.

    Essential Duties and Responsibilities : include the following, but other duties may be assigned.

    • To consistently work to improve customer satisfaction and increase sales for all F&B outlets.
    • To interview, hire, train, discipline, delegate responsibility and supervise all restaurant and room service staff. Additional responsibilities will be added every 90 days.
    • To review all schedules and copy to General Manager and / or HR Manager.
    • To oversee the ordering of paper, computer supplies, glassware, tableware, liquor, beer, soda, wine etc.

    for the F&B department. Includes weekly inventories and ordering.

    • Program Silverware system for any new employees, specials, changes in menu or pricing.
    • Upon reopening / rebranding of the restaurant you are expected to work and train on as many shifts per week as possible.

    This includes opening the restaurant in the morning and closing the restaurant at night.

    • To work closely with the Executive Chef and line cooks / supervisors.
    • Oversee the creation and implementation of all menus and food items.
    • Constantly review liquor, wine, and food sales, changing and rotating products as needed.
    • Monitor server and cash out procedures and work with accounting to correct errors.
    • Review and authorize weekly timesheets and deliver to human resources in a timely manner. Report and document all personnel issues with Human Resources.

    Complete all personnel forms in an accurate and timely manner.

    • Attend weekly manager and BEO meetings, as needed.
    • Be responsible for callouts, monitor hotel occupancy and any special guest or group needs, adjust daily and weekly staffing as needed as dictated by volume.
    • Responsible for Open Table and offers suggestions / ideas for social media.
    • Create a marketing plan to help increase revenue for the restaurant which will then be used throughout the F&B Department.
    • Knows and understands how to perform all jobs within the department.

    Supervisory Responsibilities At beginning - Directly supervise 1-3 supervisors and 15-25 employees. Promptly reports any violation that has been reported to you.

    To include, but not limited to : Harassment, code of conduct, safety, and / or wage and hour issues.

    Qualifications To perform this job successfully, an individual must be able to perform each essential duty of all individual employee requirements.

    Must have solid knowledge of alcohol, wine and food preparation and service. The requirements listed below are representative of the knowledge, skill, and / or ability required for this position.

    Mathematical Skills The ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals is required.

    Certificates, Licenses, Registrations : TIPS certification or State of Maine equivalent certification of liquor laws training.

    Education and / or Experience High school diploma or general education degree (GED); and five or more years related experience and / or training;

    or equivalent combination of education and experience. Three or more years of experience at Management Level.

    Language Skills The ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals is essential.

    Also required is the ability to write routine reports and correspondence. Lastly the ability to speak effectively before groups of customers or employees of this organization will be required as well.

    Must have level three English.

    Reasoning Ability The ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.

    Also, the ability to deal with problems involving several concrete variables in standardized situations shall be required as a job description.

    Physical Demands The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.

    While performing the duties of this job, the employee is regularly required to stand for lengthy periods of time. The employee frequently is required to walk and talk, hear, taste and smell.

    The employee is occasionally required to sit, stoop, crouch, kneel, or crawl, and to use hands to finger, handle, or feel;

    reach with hands and arms; and climb or balance.
