Oversees the activities of the kitchen staff and monitors food production and presentation. Being a Sous Chef resolves operational issues. Performs quality checks on ingredients and prepared dishes. Additionally, Sous Chef complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. May require an associate degree in culinary arts or equivalent. Typically reports to an executive chef. The Sous Chef supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be a Sous Chef typically requires 3 years experience in the related area as an individual contributor. Reports to: Executive Chef
Hours of Operation: Tuesday through Saturday (Some late nights and early mornings may be required) Open to full time and part time applicants.
Compensation: Hourly pay based on experience, plus tip share
The Sous Chef at Turf Club is responsible for supporting the Executive Chef in various kitchen functions, including food purchasing, preparation, and maintenance of quality standards. This role involves overseeing kitchen operations, training employees, and ensuring adherence to culinary standards, cleanliness, and safety protocols.
Assist in the preparation of a variety of meats, seafood, poultry, vegetables, and other food items using various kitchen equipment.
Follow standard portion sizes, cooking methods, and quality standards.
Ensure consistent adherence to recipes and serving standards.
Assumes 100% responsibility for quality of products served.
Sanitation and Cleanliness:
Maintain a clean and sanitary work area, including equipment, surfaces, and storage areas.
Implement proper closing and opening procedures, following checklists for kitchen stations.
Assist in training kitchen personnel during off-peak periods.
Collaborate with the Executive Chef to ensure proper training of new kitchen employees.
Inventory and Ordering:
Assist in controlling food cost and usage by following proper requisition procedures.
Work with the Executive Chef to plan and price menu items.
Ensure products are ordered according to specifications and received in correct condition.
Safety and Compliance:
Oversee the training of kitchen personnel in the safe operation of equipment and utensils.
Ensure adherence to cleanliness and sanitation practices.
Maintain knowledge of and compliance with all relevant licenses and certifications.
Communication:
Communicate clearly and timely with managers, kitchen and dining room personnel, and guests.
Collaborate with restaurant managers on labor scheduling and staffing needs.
Be able to reach, bend, stoop, and lift up to 50 pounds.
Work in a standing position for extended periods (up to 10hours).
Minimum of 5 years of experience in various kitchen positions, including Sous Chef or similar roles.
Strong communication skills.
Ability to maintain a professional demeanor during high-stress periods.
Hold and maintain required licenses and certifications for food service management.
Familiarity with relevant software and technology for kitchen operations.
Experience in concept and execution of animal butchery, fermentation and traditional preservation methods
