Sous Chef assists the Executive Chef in the daily kitchen operations including menu development, purchasing, inventory, cost control, and sanitation. Oversees the activities of the kitchen staff and monitors food production and presentation. Being a Sous Chef resolves operational issues. Performs quality checks on ingredients and prepared dishes. Additionally, Sous Chef complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. May require an associate degree in culinary arts or equivalent. Typically reports to an executive chef. The Sous Chef supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be a Sous Chef typically requires 3 years experience in the related area as an individual contributor.     • Kitchen sanitation and cleanliness
    • Staff food handling compliance to include labeling and dating
    • Assist in ordering food and supplies
    • Directs food prep and collaborates with Chef and other management team members
    • Helps to design food and drink menus
    • Supervise staff and act as the manager on duty for kitchen, café and patient services
    • Ensures recipes are followed and food is top quality
    • Produces food for Catering
    • Trains new employees
    • Acts as a leader of the department in the absence of other managers
    • Must be available to work a minimum of every other weekend
    • Needed to close the kitchen most days working approximately from 1130 to 9
    • Assist Chef in scheduling staff
    • Inventory Food, Cleaning Supplies,
    • Coaching and Counseling Associates
    • Work food lines as needed in kitchen and café

    Must have solid kitchen leadership experience. Experience desired in a Contract Dining Food Service setting such as Hospital, School, College, Senior Living or Corporate Dining accounts. A strong Supervisor with solid Culinary Training, ready for the next step would be ideal.

     

    Requirements:

    • 3-5 Plus Years in a Supervisory Experience or Sous Chef
    • High Volume background
    • Impeccable communication Skills
    • Restaurant Management knowledge
    • Thorough knowledge of Menu implementation with STUNNING presentation ideas
    • Catering Experience
    • Culinary Degree strongly preferred
