Sous Chef assists the Executive Chef in the daily kitchen operations including menu development, purchasing, inventory, cost control, and sanitation. Oversees the activities of the kitchen staff and monitors food production and presentation. Being a Sous Chef resolves operational issues. Performs quality checks on ingredients and prepared dishes. Additionally, Sous Chef complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. May require an associate degree in culinary arts or equivalent. Typically reports to an executive chef. The Sous Chef supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be a Sous Chef typically requires 3 years experience in the related area as an individual contributor. A Sous Chef is the second-in-command assisting the Executive Chef and is responsible for the day-to-day culinary operations with functions that include menu creation, food purchasing and maintenance of quality standards. A Sous Chef assumes the role of cost controlling and maintaining food cost and supervises storage, stocking and sanitation procedures. The Sous Chef assists in the management and training of new personnel, scheduling staff work hours and doing performance reviews.

    Responsibilities
    • Manage all activities in the kitchen, including food preparation, production, management and training of kitchen staff.
    • Ensure efficient, cost-effective operation and profitability of food production.
    • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary and in perfect operating order.
    • Ensure that food products, presentation and plating are of the highest quality and are prepared to serve in a timely manner.
    • Assume the role as Head Chef in his or her absence.
    • Assure adherence to all standards of food quality, preparation, recipes and presentation in conjunction with the specifications.
    • Monitor holding and storage operations, stocking, food rotation and guarantee food service sanitation standards are met.
    • Assure kitchen personnel is trained in best cleanliness and sanitation practices.
     Fundamentals
    • Strong desire to continually learn and the ability to maintain a courteous demeanor.
    • High school or GED equivalent required, formal culinary training or associate degree in culinary arts preferred.
    • Experience: 2 years experience in a fine dining or upscale casual environment.
    • Safe Food Handling Certification.
    • Excellent understanding of various cooking methods, ingredients, equipment, and procedures.
    • Flexibility to work any shift, including evenings, weekends, and holidays.
    • Excellent verbal and written interpersonal communication skills.
    • Proficiency in English required. A second language is desirable.
    • Strong organizational skills, including follow-up, time management, ability to multi-task and manage multiple priorities in a fast-paced environment.
    • Ability to positively communicate and interact with all hotel departments.
    • Ability to grasp, lift and or carry, or otherwise, move goods weighing a maximum of 50 lbs.
    • Ability to stand for long periods of time in an indoor setting with a thematically climate-controlled workstation.
