Sous Chef assists the Executive Chef in the daily kitchen operations including menu development, purchasing, inventory, cost control, and sanitation. Oversees the activities of the kitchen staff and monitors food production and presentation. Being a Sous Chef resolves operational issues. Performs quality checks on ingredients and prepared dishes. Additionally, Sous Chef complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. May require an associate degree in culinary arts or equivalent. Typically reports to an executive chef. The Sous Chef supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be a Sous Chef typically requires 3 years experience in the related area as an individual contributor. AC Restaurants is seeking highly motivated, superstar Sous Chefs to assist in the management of culinary teams within the restaurant group owned and operated by James Beard Award-winning chef Ashley Christensen. The Sous Chef reports to the Chef de Cuisine (CDC) and acts as the CDC’s representative in their absence.

    Job Description

    • Be a leader. At AC Restaurants, we are dedicated to creating a work environment where our team is set up for success, feels inspired to come to work every day, and has a great time doing so. Under the direction of the CDC, you will be responsible for hiring, training, scheduling, and managing a kitchen team that aligns with our values (work hard, play hard, be kind). You must be able to clearly communicate and instruct cooks in steps of prep, cooking, garnishing, and presentation to achieve consistent, high-quality dishes.
    • Set the example for quality. You will be responsible for executing and monitoring food preparation methods, portion sizes, garnishing, and presentation to ensure that the quality of the food that we serve meets our (very high) company standards, from the moment an ingredient arrives to the moment it hits the table.
    • Set the example for compliance. You will be responsible for ensuring that the staff understands and follows all company standards and governmental regulations for food safety and service. You will also be responsible for adhering to all federal and state labor laws and reporting any building maintenance issues.
    • Assist in monitoring the restaurants' financials. You will be responsible for taking inventory, making projections, costing recipes, managing within budgets and spending limits, managing P&L, reporting on financials, and paying vendors.

    Job Skills & Requirements

    • You must be at least 18 years of age and have a valid driver’s license.
    • You have at least 2 years of kitchen management experience and a deep wealth of knowledge in food production, including tools, sourcing, storing and handling.
    • Serve Safe certification is preferred but not required. Certification must be received before the sixth month employment anniversary.
    • You must be able to lift and carry at least 25 pounds and stand and walk for extended periods of time.
    • You are dependable, honest, and professional.
    • You’re the type of person who won’t let a dish leave the pass unless it’s 100%. You have razor-sharp attention to detail and crystal-clear communication and coaching skills.
    • You have excellent time management, prioritization, and problem-solving skills.
    • You work well as part of a team and leave ego at the door.
    • You are a crusader for great hospitality and strive to make every meal memorable.
    • You see value in understanding and participating in the “business side” of the business, and you are able to perform fundamental business math, including addition, subtraction, multiplication, division, fractions, percentages, and basic algebra.
    • You’re familiar with the following tools and equipment: ovens (gas and Combi), knives, grinders, graters, blenders, slicers, commercial dishwashers, Robocoupes, ranges, hood systems, cryovac machines, thermometers
    • Familiarity with the following electronic systems is preferred but not required: Restaurant 365, BaseCamp, Paycor, ScheduleFly, Microsoft Office, and Google platform applications (i.e., Gmail, Calendar, Google Docs, etc).

    Compensation:
