Sous Chef assists the Executive Chef in the daily kitchen operations including menu development, purchasing, inventory, cost control, and sanitation. Oversees the activities of the kitchen staff and monitors food production and presentation. Being a Sous Chef resolves operational issues. Performs quality checks on ingredients and prepared dishes. Additionally, Sous Chef complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. May require an associate degree in culinary arts or equivalent. Typically reports to an executive chef. The Sous Chef supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be a Sous Chef typically requires 3 years experience in the related area as an individual contributor.   • The Blackbird Restaurant in downtown Asheville is seeking an Executive Sous Chef. The ideal candidate would have at least 2 years of previous sous experience, but we are willing to train the right person.

    We are a Chef owned restaurant that strives to serve fresh, local ingredients. We have been serving the Asheville community for 10 years. This is a chance to learn and grow with a tight management team that includes our Chef and Owner.

    Duties include:

    -Help prepare and design food

    -Produce high quality dishes, both design- and taste-wise

    -Ensure that the kitchen meets quality standards

    -Fill in for the executive chef when necessary

    -Solve employee or customer issues that arise

    -Manage and train kitchen staff, establish schedules and assess performance

    -Order supplies to stock inventory

    -Comply with and enforce sanitation regulations and safety standards

    -Maintain a professional approach with coworkers and customers


    Requirements:

    -2 years of experience as a sous chef preferred, but not required

    -Understand various cooking methods, ingredients, equipment and procedures

    -Excellent record of kitchen and staff management

    -Accuracy and speed to handle emergency situations and provide solutions

    -Familiar with industry best practices

    -Working knowledge of various computer programs (restaurant management software, point-of-sale etc.)

    -BS degree in culinary science or related certificate is a plus

    Starts at $45,000-50,000 (DOE) Free Health plan and other benefits
