    Description

    GENERAL PURPOSE OF JOB

    Help manage all areas of the kitchen as needed or designated by the executive sous chef, or executive chefs. Responsible for training and supervising two to twelve prep cooks within designated kitchen area. Assist with offsite events when needed and uphold all offsite event protocols including checking out events, leading events, and ensuring client expectations are upheld by working together with the entire 24 Carrots team. Uphold all quality standards, safety, sanitation, and kitchen cleanliness.

    ESSENTIAL DUTIES AND RESPONSIBILITIES

    1. Uphold the high standards of 24 Carrots’ handbook and policies.
    2. Ensure Junior Sous Chefs and cooks stay on task, work effectively, and follow all 24 Carrots policies and procedures. Maintain order, discipline, safety, and organization in the kitchen.
    3. Conduct disciplinary action when necessary.
    4. Help organize and oversee social prep cooks and ensure food meets 24 Carrots’ standards.
    5. Responsible for checking out lead chefs for events and ensure they have all food items/equipment and how to prepare and serve them
    6. Requires an understanding of federal, state, and local kitchen health and safety standards.
    7. Responsible for compliance with industry food safety standards
    8. Maintain and supervise a clean and sanitary working environment
    9. Ability to work with special food handling requirements for certain dishes such as vegan or gluten free
    10. Ensure food/resources are utilized in an efficient and costeffective manner
    11. Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
    12. Read and understand all banquet event orders
    13. Assist with prep work as needed and oversee tastings.
    14. Assist with produce order when needed
    15. Works closely with executive sous chef to get various tasks accomplished like food cost control, labor cost control, equipment upkeep, etc.
    16. Communicate and work with other departments to service clients’ needs.
    17. Fill in for all kitchen positions wherever help is needed

    SUPERVISORY RESPONSIBILITIES

    Directly supervise kitchen staff members Junior Sous Chefs. Carry out supervisory duties in accordance with 24 Carrot’s policies, handbook, and applicable laws. Responsibilities include overseeing and directing employees as well as addressing complaints and solving problems. Accomplishes staff results by communicating job expectations; planning, monitoring, and appraising job results; coaching, counseling, and disciplining employees; developing, coordinating, and enforcing systems, policies, procedures, and productivity standards. Provides training and retraining of Junior Sous Chefs and kitchen team members.

    EDUCATION AND/OR EXPERIENCE

    1. Two to four years related experience and/or training
    2. California Food Handler’s card required within 30 days of hire
    3. Reliable transportation and clean driving record required.

    1. Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations
    2. Ability to write reports, business correspondence, and procedure manuals
    3. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.

    MATHEMATICAL SKILLS

    1. Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
    2. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
