SUMMARY
- Responsible for pouring wine pairings/suggesting
BTG wine to guests.
- Is responsible for polishing stemware before
service nightly as needed.
- Communicating inventory needs for stemware to
DoW monthly.
- Changing
wine pages and maintaining cleanliness of wine lists
- Restocking BTG bar fridges nightly while
preserving open wines.
- Completing closing checklist nighly
- Duties will include but are not limited to
security of all wine and beverage product.
ESSENTIAL FUNCTIONS
- Assist, accomplish prep/side work as assigned and support the daily needs
for dinner service
- Pour pairing wines for our prix fixe menus in a timely manner
- Explain via one-liners the wine pairing
- Maintain the aesthetic of assigned station: guest tabletop/work area
- Be present/focused on the operation during service
- Complete closing duties as assigned
- Assist in the receipt and storage of all wine product in their proper
areas
- Maintain the ongoing security of all wine assets
QUALIFICATIONS
Required
- 5 years floor experience as sommelier in high-end restaurant/ hotel
- 5 years’ experience assisting in the organization and upkeep of a large
(1000 selection) wine cellar
- Excellent and effective trainer
- Intro
or Certified standing with W.S.E.T./C.M.S.
- Experience
working with a large cellar (1000 selections) or with a Wine Spectator Grand
Award cellar
- Basic
understanding of the business of wine (purchasing, costs, asset protection).
- Basic knowledge of major wine regions/producers
Desirable
- Certified
or Advanced standing with W.S.E.T./C.M.S.
- Some
travel and personal experience visiting producers/vineyards in major growing
areas
- Basic
reference points of Michelin and fine dining establishments in U.S and abroad

SCHEDULE
- The typical schedule for this position will be 5 days a week with Monday
and Tuesday being usual days off.
- This schedule will, however, be dictated by operational needs and may be
changed at any time to accommodate those needs.
PHYSICAL DEMANDS
- Be able to work the dining room floor for up to 8 hours.
- Be able to lift 40 lbs repeatedly.
- Must be able to transport heavy items to day cellars (up to 200 lbs on a cart)
- Stand for long periods of time, extended periods of walking
