    ESSENTIAL FUNCTIONS:

    8. All cooks must be available to work all shifts and schedules
    9. Ability to work in a fast paced, stressful environment;
    10. Possesses the necessary skills to manage and adapt to changing business levels.
    11. Practice safe food handling techniques including HACCP principals and State of California health codes as inspected by the Indian Gaming Health Service.
    12. Gather necessary cookware, portioning utensils, and food items for shift.
    13. Practice proper product storage and product rotation (First in, First out).
    14. Follow proper cleaning procedures and understands how to take steps to avoid cross contamination
    15. Advises supervisor of any potential sanitation of food safety concerns.
    16. Assure that your station has correct food temperatures, and the surrounding area is clean and well stocked with necessary equipment, plates and utensils.
    17. Report any incidents or problems at the stations to supervisor on duty.
    18. Anticipate problems and solutions by being proactive and having a sense of urgency.
    19. Complete all assigned duties in an accurate, efficient manner.  Always look for opportunities to work on prep items when time permits.
    20. Possess good knife skills including safe knife handling and special tool handling principles.
    21. Ability to convert recipes to accommodate business levels.  Uses measuring cups and spoons to accurately measure ingredients per the recipe; understands and uses both wet and dry units of measurements appropriately.
    22. Ability to execute recipes efficiently and accurately with minimal direction or supervision.
    23. Ability to work most stations and utilize equipment safely and efficiently including grills, ovens, fryers, flat tops, broilers and slicers.
    24. Motivated to provide the highest quality of food to our Players and checking that quality by regularly inspecting and tasting food in order to identify issues before food is served to the Player.  Any issues with the food must be corrected and reported immediately to a Supervisor.
    25. Follow proper hygiene procedures, as well as breakdown and closing procedures.
    26. At the end of your shift make sure your station is clean, including work preparation surfaces and refrigerators, and all food is covered, labeled and placed in a walk-in or appropriate storage.

    MINIMUM QUALIFICATIONS:

    Ability to read and understand standardized recipes, kitchen printer tickets, preparation lists and schedules.

    REQUIRED EXPERIENCE:   

    Minimum 1-2 years of food handling experience
