  • Summary  

    The Cook I coordinates daily food portioning, basic preparation of food items and support for Cook II in their production needs.

     

    Duties/Responsibilities

    • Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in boilers, ovens, grills, fryers and a variety of other kitchen equipment.
    • Ensure production of prep items, check prep list and inventory on-hand vs. projected needs.
    • Maintain and operate equipment properly.
    • Ensure proper handling / storage of all products in accordance with standards and sanitation.
    • Portion food products according to standard portion sizes and recipe specifications.
    • Maintain the standards of preparation and presentation of all food products.
    • Participate in menu item planning, prep and presentation.
    • Stock and maintain sufficient levels of food products at line stations to assure smooth service.
    • Operate and maintain the cleanliness of various equipment needed to prepare and serve menu items.
    • Always works as a team player. Is capable of being cross-trained at the discretion of management. 
    • Displays knowledge of food and beverage available in outlet.  This includes ingredients and manner of preparation for all dishes and other items served in the outlet. 
    • Displays knowledge of proper food presentation including handling, garnishing and serving of all food items.
    • Participate in special events and banquets. 
    • Maintain knowledge of Casino and department promotions, programs, and services. 
    • Must be able to work posted scheduled shifts. (Scheduling is based on the needs of the Casino.)
    • Maintain cleanliness and sanitation of all department outlets according to Soboba Casino standards.
    • Is willing and capable of following directions from Leadership team at all times.
    • Is capable of working in a safe and clean manner and reports all unsafe conditions immediately to supervisor or takes personal responsibility if supervisor is not immediately available.
    • Must be physically present to work a regular, reliable, and predictable work schedule in accordance with business demands, and maintain a consistent and regular attendance record.
    • Perform special projects and other responsibilities, tasks, or duties as requested.

    • Serve as a contributing Team Member of the Soboba Band of Luiseño Indians enhancing the Casino’s operations in all its business endeavors.

    Education / Qualifications

    • Must be 18 years of age, or older.
    • High School Diploma or GED equivalent preferred.
    • Must possess knowledge of knife use and safety.
    • Must possess knowledge of various kitchen equipment.
    • Firm understanding and practical application of health and safety standards.
    • Must be able to work in a smoking environment.
    • Must be able to work any day of the week and scheduled shift.
    • Any combination of education, experience and training that provides the required knowledge, skills and abilities.
    • Must be able to provide evidence of eligibility to work in the United States of America.

    Certificates, licenses and registration

    • Ability to obtain and maintain a valid Soboba Tribal Gaming Commission license. 
    • Required to submit to and obtain negative results on all drug and/or alcohol testing.
    • Required to have a valid Riverside County Food Handler Card and / or ServSafe Certification, or obtain same upon hiring.
