    Under the direction of the Director of Food and Beverage, the incumbent is responsible for the successful operation of our restaurants in accordance with established operational and guest service standards of excellence. Motivates and directs staff in all aspects of performance and ensures they adhere to aforementioned standards.  Ensures financial profitability and returns to the Seminole Casino Hotel Immokalee.

     

    Essential Job Functions:

     

    • Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures.
    • Identify and define business needs and implement solutions which result in beneficial changes in the operation of the restaurant, improvement in the restaurant’s impact or interaction with customers, improvement in the restaurant’s ability to reduce or contain costs or generate additional revenue.
    • Work in conjunction with the Chef and direct the development and administration of controls for all phases of the restaurants in an economical and profitable manner while maintaining established standards.
    • Spearhead menu item changes based on product mix reviews and guest feedback.
    • Develop drink, cigar and specialty menus in conjunction with chef in an effort to remain on the cutting edge of industry trends and standards.
    • Ensure that the restaurant supports the casino by providing outstanding service to VIP guests in the restaurant and during special events.
    • Institute cost control procedures, inventories and standards of performance. Review purchase orders and inventory levels as needed.
    • Work with manual and automated systems and develops or implements procedures, formats, budgets, testing, training and documentation.
    • Provide project leadership and project management as assigned.
    • Act immediately on all guest complaints to ensure that a correction is made whenever possible.
    • Develop department members’ knowledge and skills through education, training, coaching, corrective counseling, etc. Guide and inspect assigned personnel in the proper performance of their duties.
    • Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns and observations.
    • Conduct personal behavior and select, train, coach, counsel, appraise and retain direct reports who consistently perform actions and behaviors that reinforce the Company’s Mission and Values of Communication, Integrity, Fun, Respect, Accountability, Passion and Dedication.
    • Demonstrate commitment to assisting in the development of Seminole Tribe members participating in the Tribal Career Development program and, when a Seminole Tribe member’s assignment falls within your direct area of responsibility, act as a personal mentor/career advisor to the Tribe Member and submit progress reports and information to the Director of Tribal Development.
    • Ensure prompt and discreet notification to appropriate management and/or the Ethics Hotline of any observation of illegal acts or internal ethics violations.
    • Assist in coordinating with support departments to maintain cleanliness, facilities issues, purchasing and warehouse, finance and payroll, security and human resources.
    • Develop and implement operating standards as necessary.
    • Communicate with management, other departments, and designated personnel to address the needs of the POS system.
    • Other duties as assigned.

    Qualifications

    College degree in business along with five years fine dining experience, with at least three years in a management role required or an equivalent combination of education and experience. Must have strong knowledge of financial data. Proven cost control techniques and a track record of driving financial results required.

     

    Additional Requirements:

     

    • Proven ability in developing budgets and business plans.
    • Proven ability in writing documentation, procedures, and training programs.
    • Project management experience (writing a project plan, measuring progress, delivering results).
    • Excellent interpersonal, multi-tasking, customer service, communication, team building, and problem solving skills are required, along with the ability to work independently.
    • Excellent verbal and written communication skills
    • Ability to respond calmly and make rational decisions when handling guest and team member conflicts
    • Ability to compile, compute, and analyze pertinent data needed for reports.
    • Ability to work with the POS and beverage systems.
    • Must be able to quickly and accurately perform mathematical computations.
    • Ability to negotiate and build relationships with diverse departments and casino personnel and have flexibility to work in an ever-changing environment
    • Ability to implement strategic visions and plans into day to day operations.

    Qualifications

    WORK ENVIRONMENT

    • While performing the duties of this job, team member is regularly required to stand, walk, and demonstrate high-mobility for a majority of the shift.
    • Will also regularly: speak and listen to internal and external customer directions or orders in an atmosphere of varying background noise; transit across surfaces that may alternate between carpeted and hard surfaces; walk through slippery surfaces and/or sloping floors or stairs; use hands to finger, handle or feel small objects such paper or cloth; and reach with hands and arms overhead and from side to side.
    • Specific vision abilities required by this job include close, distance, color, peripheral vision and depth perception. Will often transit between brightly lit and dimly lit areas, including flashing lights and computer or TV screens.
    • Position requires bending, lifting and carrying supplies and equipment up to 20 pounds, will be required to use, push and pull wheeled hand-carts or other equipment weighing in excess of 100 lbs.
    • Will regularly bend, stoop, kneel, and twist at the waist. May occasionally be exposed to bodily fluids, pet or service animals, and strong odors.
    • Will regularly be exposed to tobacco and other second hand smoke.
    • May occasionally use de-escalation techniques to resolve customer conflict.
    • Will be required to assist in customer evacuation in case of emergency.

    The Tribal Council gives preference in all of its employment practices to Native Americans. First preference in hiring, training, promoting and in all other aspects of employment is given to members of the Seminole Tribe who meet the job requirements. Second preference is given to members of other federally recognized Native American Tribes who meet the job requirements.
