General Functions:
The Kitchen Supervisor is responsible for operating all kitchen functions in line with policy, procedure and best practices of the Child and Adult Care Food Program (CACFP) and current food service regulations. Responsibilities include: planning meal service with a certified Nutritionist or Dietician in order to adhere to a well-balanced and appetizing menu, purchasing of meat, produce, and necessary supplies in line with budget guidelines and CACFP Meal Patterns, ensuring policies and procedures are adhered to at every service delivery level, team members are sufficiently trained in order to implement their daily duties, and remain current with all regulations and training applicable to the position.
Duties and Responsibilities:
- Feed infants and toddlers according to their individual developmental readiness and feeding skills as recommended in USDA requirements outlined in 7 CFR parts 210, 220, and 226, and ensure infants and young toddlers are fed on demand to the extent possible in collaboration with our Health and Education team.
- Prepare meals for up to 64 toddlers and infants following CACFP Nutritional Guidelines and Meal Patterns, ensuring that all meals are healthy with no added sugars, salts, fat or spices and adhere to the CACFP Early Childhood approved menu.
- Preparing individualized infant meals for up to 20 infants according to each child’s developmental readiness for the consistency and type of food, changing the meals as the child progresses and consistent with their eating habitats. Follow CACFP Nutritional Guidelines, ensuring that all meals are healthy with no added sugars, salts, fat or spices.
- Ensure that children who arrive after mealtimes that have not been given a meal at home are offered a nutritious meal.
- Prepare specialized meals for infants and toddlers experiencing allergies to foods, adhering to nutritional guidelines.
- Ensuring the count of each individual child’s meals is entered in according to CACFP guidelines and time slot allocated, for each classroom.
- Work with Child health Manager and Medical Provider as needed to ensure medically prescribed meals adhere to doctor’s orders including G-Tube and allergies and other emergent needs.
- Works with registered dieticians or nutritionists with appropriate qualifications to meet standards.
- Create and ensure that food plans and nutrition programs support babies and toddlers; cook according to planned menus, special dietary and/or nutritional restrictions, and necessary portions.
- Ensure that healthy meals are available three times a day and ensure that menus are varied, nutritionally balanced and appetizing. Take advantage of food on sale, in-season and reflect Alaska Native traditional diets whenever possible.
- Supervise Food Services & Facilities Assistant to ensure proper service delivery is being upheld and employee is meeting expectations of position as an employee of Clare Swan Early Learning Center.
- Work with Senior Manager to develop training plan for kitchen operations and Food Services & Facilities Assistant in alignment with companies annual Training and Technical Assistance, to meet the requirements for operations.
- Plan, Plan, prepare, and have available healthy snacks.
- Clean and inspect galley equipment, kitchen appliances and work areas in order to ensure cleanliness and functional operation by maintaining a routine for washing pots, pans, dishes, utensils, and other cooking equipment and involve ETC work-therapy participants as appropriate.
- Ensure that high standards of sanitization are upheld and meet all relevant regulatory requirements.
- Direct food preparation activities and corrective actions as needed to protect the health of CSELC participants.
- Compile and maintain records of food use and expenditure.
- Maintain inventory of food supplies and kitchen equipment based on estimates of future needs.
- Work with a team to provide food for Family Nights.
- Provide education in alignment with Family Services delivery plan to provide parent education in kitchen regarding nutrition.
- Monitor menus and spending to ensure meals are prepared economically.
- Maintain confidentiality according to regulations, policies, and procedures.
- Perform related duties as assigned.
- Identify hazards in the daily food operation and make necessary corrections.
- Develop, implement and monitor policies and procedures to prevent food borne illness.
- Follow the state and municipal food codes.
Job Specifications:
- Strong knowledge of basic nutrition and best practices regarding diet-related wellness.
- Demonstrated ability to store, prepare, cook and service in compliance with the Municipal Codes and safe food-handling practices.
- Demonstrated ability to operate all kitchen equipment in a safe manner to meet all Municipal Code and OSHA standards.
- Demonstrated ability to follow a written menu that meets the nutritional needs and to judge food quantities necessary to meet those needs.
- Maintain a respectful relationship with and support the management of the organization
- Have and maintain current "Serv-Safe" credentials.
- Thorough understanding and capable of sufficiently answering all questions during a health and safety inspection including explaining the seventeen (17) listed topic areas in the Municipal of Anchorage Food Code Guide found on the municipal website.

Minimum Qualifications:
- High School Degree or GED.
- Training or education in nutrition, food science, or related field including CACFP Nutritional Guidelines.
- State of Alaska Certified Food Protection Manager credential or obtain within six (6) months of hire.
- Municipality of Anchorage Food Worker Card or obtain within six (6) months of hire.
- One year of experience in planning menus and cooking for 70-100 people.
- Continued employment is contingent upon receipt of a satisfactory state and federal background and reference check results.
Preferred Qualifications:
- Associate’s degree or higher in nutrition or related field.
- Experience working in a residential facility.
- Valid Alaska driver's license and insurable under CITC's automotive insurance, which requires a driver to be at least 21 years of age and have had a driver's license for at least three years.
