    The Food & Beverage Manager is responsible for overseeing assigned Food & Beverage outlets to ensure optimum performance, exceptional guest service and maximum profitability of all functions. The Food & Beverage Manager will assist in maintaining the Forbes Standards. They will Supervise, train and inspect the performance of the Pool/Beach Staff, ensuring that all procedures are completed to the hotel's standards.  Assist all guests at Pool/Beach facilities with towels, seating, rentals, retail and requests courteously and efficiently, according to standards. Continually exemplify the attributes of property leadership corresponding to the culture of Terranea Resort and CoralTree Hospitality, while leading through a hands-on, lead-by-example style that creates and fosters a positive work environment.

    Responsibilities

    • Manage, train and inspect the performance of the Pool, ensuring that all procedures are completed to the hotel's standards.
    • Assist all guests at Pool facilities with towels, seating, retail and requests courteously and efficiently, according to standards.
    • Maintain the cleanliness and organization of all supplies, equipment, work areas, and ensure guest safety and enjoyment.
    • Enforces high standards of hygiene and sanitation within the outlets
    • Ensures the security of monies, credit and financial transactions
    • Supervises the performance, attendance, attitudes, appearance and conduct of service team
    • Assists in monitoring and maintaining the outlets’ systems and equipment
    • Check storage areas for proper supplies, organization and cleanliness. Instruct designated personnel to rectify any cleanliness/organization deficiencies.
    • Establish par levels for supplies and equipment. Complete requisitions to replenish shortages or additional items needed for the anticipated business.
    • Empowers team to exceed service standards
    • Instills a calm, organized approach in all stressful situations
    • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
    • Anticipate guests’ needs, respond promptly and acknowledge all guests, however busy and whatever time of day.
    • Resolve guest complaints, ensuring guest satisfaction.
    • Maintain complete knowledge of:
      • Daily house count, VIPs in-house, arrivals/departures.
      • Scheduled group activities and locations within hotel.
      • All hotel facilities and services.
      • Hours of operation of each outlet.
      • All equipment and services available for guests at the Pool/Beach facility.
      • All safety and sanitation regulations for Pool/Beach facility.
      • Proper use of respective tools, equipment and supplies in the department
      • Adhere to all cashiering procedures and reports in accordance with accounting specifications.
    • Ensure that staff has reported to work; document any late or absent employees.
    • Distribute assignments and side work to staff in accordance with departmental procedures. Communicate additions or changes to the assignments as they arise throughout the shift.  Identify situations which compromise the department's standards and delegate these tasks.
    • Conduct pre-shift meeting with staff and review all information pertinent to daily business demands.
    • Inspect grooming and attire of staff; rectify any deficiencies.
    • Constantly monitor staff performance in all job functions, ensuring that all procedures are completed to department standards; rectify any deficiencies with respective personnel.
    • Ensure all charges for rental and sale items are accurately processed.
    • Ensure all safety precautions are implemented and monitored.
    • Review sales for previous day; resolve discrepancies with Accounting. Track revenue against budget.
    • Provide feedback to staff on their performance. Handle disciplinary problems and counsel employees according to Hotel standards.

    Additional Duties & Responsibilities:

    • Complete and direct scheduled inventories
    • Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet the business demands.
    • Prepare and submit daily/weekly payroll and tip distribution records as assigned
    • Works as MOD as assigned.
    • Assists in other F&B venues as needed.

    Qualifications

    • Must be highly detailed orientated
    • Must have strong working knowledge of Microsoft Office programs
    • Must be able to work in a fast-paced environment

    • Must be professional in appearance and demeanor
    • Must always ensure a teamwork environment
    • Ability to work a flexible schedule that may include evenings, weekends and holidays
    • Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner
    • Must have a passion for creating an exceptional experience for all guests

    Experience, Education, & Licensure:

    • High School diploma or equivalent required
    • At least three years supervisory food and beverage experience required
    • Prior Four or Five Star experience preferred
    • Valid Food Handler’s Certificate

    Compensation

    Base Pay Start Rate: $75,000/Yr. - $85,000/Yr.
