    Food & Beverage Manager performs management responsibilities in accordance with all company standards, policies, and procedures; must be able to fulfill the financial, administrative, human resource and technical responsibilities within the Food & Beverage Department; assists the Vice President and Director to oversee daily operations of all Food & Beverage outlets within the casino; must be knowledgeable on all Food & Beverage Outlets (both operationally & administratively); and must be able to fulfill managerial duties in any F&B outlet in case of an emergency or otherwise. As a member of the Food & Beverage Management Team, this position oversees several outlets.

    Essential Functions

    • Responsible for practicing, supporting, and promoting Thunder Valley Casino’s “Winning Attitude” Company-wide culture and demonstrating Thunder Valley Casino’s AAA Four Diamond Service Standards at all times.
    • Oversee restaurant and beverage operational & administrative responsibilities.
    • Communicating with department heads in Food Services, Beverage and related support and operating departments.
    • Assist the Managers with departmental selections, hiring, training, standards & procedures, evaluating, and scheduling processes.
    • Evaluation and documentation of performance on all management positions.
    • Review and assist the managers with the capital budgeting process including day to day forecasting of revenue, and associated labor, beverage and operating costs.
    • Assists the managers with handling Guest recovery and Team Member issues with appropriate documentation and follow up.
    • Office & Administrative layout policies & procedures, including E-mail communication, filing, logs and data entry, Time Management, scheduling, shift bidding, etc.
    • Communication with outgoing and incoming Shift Manager, Asst. Director and Director.
    • Responsible for periodic performance evaluations of subordinate management level, followed with praise, coaching & direction.
    • Knowledge and follow up of proper documentation of attendance, discipline, incidents, and schedules, meeting notes, reports and any other related material in a timely manner using the appropriate forms provided.
    • Requires a working knowledge of all equipment, their maintenance and operation including Infogenesis POS system, liquor dispensing equipment, soda dispensing equipment, and beer systems, payroll accounting, reservation & Infogenesis systems.
    • Requires a comprehensive knowledge of products offered including wine & spirits, food recipes, prices, presentation, internal control procedures and all company as well as department policies.
    • Related tasks include but not limited to labor requirements, appearance codes, over & shorts, comment cards, P&L briefs (with managers), Business Plan Objectives, budgeting & planning, coordination and span of control.
    • Will be required to attend and complete company provided Leadership & Training Classes.
    • Responsible to ensure all operations follow safety and health guidelines.

    Minimum Qualifications

    • Ability to communicate effectively with Guests, Team Members and Management in both written and verbal form.
    • Must be proficient in computer applications Microsoft Word, Excel, PowerPoint, Outlook, and Point of Sale systems (Infogenesis). Understand basic functions within an AS400 system involving payroll, and ordering & requisitioning software.
    • High school diploma or equivalent required, college degree in Hotel & Restaurant Management preferred.

    • Qualified candidate must have 5-7 years experience in high volume, Multi Outlet Food & Beverage Operations including catering & banquet facilities in a Las Vegas style casino environment.
    • Ability to obtain / renew all required licenses or certification specifically Tribal Gaming License.
    • Possess or obtain a California Food Manager Card.
