    Summary: *
    Responsible for purchasing and negotiating goods and services. Exercise buying responsibilities and judgment on evaluating vendor quotes and services to determine most cost effective suppliers and the best prices.
    Essential Duties and Responsibilities include:

    • Responsible for purchasing $10 million annually in food & beverage products that result in projected earnings of $22 million for the year.
    • Maintains system in excess of 4,000 products that includes bid specification files for weekly and monthly processing, purchase and inventory profiles, blanket purchase orders and item master.
    • Process orders daily for delivery, usually for next day. No leniency or outlets and guests do without.
    • Coordinate special event and menu orders with chefs, pre-planning to save money whenever possible.
    • Continuously search for new products to improve quality or lower cost, in addition to alerting F&B management of new trends to keep our product offerings fresh and inviting to our guests.
    • Follow commodities to contract items when at their lowest point to decrease food costs or avoid major price increases.
    • Consolidate brands and negotiate with brokers/manufacturers for deviated program pricing when beneficial.
    • Collaborate with Warehouse Manager for inventory additions and deletions.
    • Stay current on food safety issues, coordinating and food recalls between supplier and Chef.
    • Make product substitution decisions if Executive Chef is not available.
    • Communicate daily to Chef an information that affects product quality, pricing or availability so that menus can be adjusted accordingly.

    This position is not limited to those duties listed in the job description. Duties and responsibilities can be changed, expanded, reduced or deleted to meet business needs of the company.

    Job Requirements:

    • Must be 21 years of age or older.
    • Must have High School Diploma or GED/equivalent or one to three years of directly related experience or equivalent combination.
    • Minimum of 2 years’ experience in Purchasing.
    • Must be proficient in Microsoft applications.
    • Prior experience with Stratton Warren (SWS) or (MMS) preferred.
    • Knowledge of hotel/casino operations.
    • Knowledge of food and beverage industry preferred.
    • Ability to meet deadlines and effectively manage multiple priorities in a demanding work environment.

    Work Environment:
