Description
Position Summary
The Food & Beverage Manager is responsible ensuring quality customer service and providing a sanitary environment for preparing food. The manager will ensure profitability through inventory control, correct pricing, and reduce waste. . The manager will direct and organize activities and create friendly atmosphere for guests and help adjust and handle service complaints of customers and employees. The manager will be responsible for ensuring the food and beverage department and staff is compliant with State/Federal/Tribal policy and procedures, regulations, and ABLE laws. 0
Essential Functions of the Position
- Ensures Thunderbird quality customer service and cheerful atmosphere maintained in your department.
- Supervises cooks, bartenders and cashiers, scheduling proper coverage for all shifts. Maintaining and entering of time by payroll deadlines.
- Maintain all departmental inventory, order supplies and food. Maintain using (FIFO) first in, first out method for food rotation.
- Maintain monthly departmental budget. Obtain management approval for any purchase other than food.
- Assuring proper portion and compliance with menu and cost control.
- Enforces health, sanitary and safety regulations. Ensure safety and cleanliness of department at all times
- Oversees maintenance of all departmental equipment as needed.
- Ensure proper equipment training for departmental employees
- Ensure food preparation and serving temperatures.
- Prepare, season and cook food following prescribed recipes.
- Establish standards, assemble and prepare any special dinners and/or events.
- Make good and proper decisions that reflect positively on you and the Casino.
- Maintain proper compliance at all times, Title 31 training and convey departmental customer service training as requested.
- Other duties as assigned or requested by management.

- Must maintain compliance with heath/ABLE/internal Policy and procedures at all times.
- Must be able to stand for long periods of time.
- Ability to establish and maintain effective working relationships with individuals at all levels of the organization.
- Knowledgeable of Federal/state/Tribal Employment laws and regulations.
- Knowledge of the operation of a variety of computer software, including MS Outlook, internet and spreadsheet applications.
- Knowledge and experience with budget preparation and analyzing a variety of reports.
- Knowledge of general management principles and practices.
- Ability to establish and maintain effective working relationships with individuals at all levels of the organization.
- Demonstrated ability to handle multiple tasks simultaneously; skill in working in an environment subject to constant interruptions and quickly changing priorities; ability to prioritize and delegate responsibilities when necessary; effective time-management skills.
- Ability to function in a professional manner during high stress/volume situations.
- Ability to learn quickly, self-leader with initiative, highly flexible and comfortable in a constantly changing environment.
- Ability to work in a team-oriented, collaborative environment and independently.
- Excellent interpersonal and communication skills to establish and maintain effective working relationships with staff, vendors, Board members, and the public, both in person and through phone, e-mail and written correspondence.

- Ability to train, instruct and supervise a variety of employees at all levels.
- Knowledge and ability to use grills, gas or convection ovens, fryers, slicers, registers and credit card machines.
Supervisory Responsibilities
- Direct supervisory responsibility for all Food and Beverage staff.
Physical Demands
- While performing the duties of this job, employees must be able to sit, stand, or walk for long periods of time. The employee must occasionally lift and/or move up to 50 pounds.
Work Environment
- Exposure to smoking and secondhand smoke.
- Must be able to work nights, weekends and holidays.
- Noise level can range from minimal to intense.
Minimum Qualifications
- High school diploma (or equivalent combination of education and experience combined).
- 3-4 years food service management experience required.
- 2 years management experience required.
- Must have strong customer service and interpersonal skills.
- Must be 18 years of age or older.
- Must possess a valid drivers license.
- Must be able to pass a drug screen, background check, and obtain a key gaming license.
- Must be able to obtain liquor license.
