FIRE CAPTAIN manages a team of firefighters. Ensures all equipment is properly maintained and serviced. Being a FIRE CAPTAIN directs training and conditioning activities. Administers the staff work schedule to ensure adequate coverage. Additionally, FIRE CAPTAIN leads and coordinates responses to fire events, hazardous material incidents, auto accidents, and search and rescue operations. Prepares post-incident reports as required. Leads or coordinates fire safety education and inspection activities. Typically is required to pass periodic physical ability tests. May require registry in NREMT. Typically requires an associate degree in fire science. Requires Emergency Medical Technician (EMT) - Basic. Typically reports to a manager. The FIRE CAPTAIN manages subordinate staff in the day-to-day performance of their jobs. True first level manager. Ensures that project/department milestones/goals are met and adhering to approved budgets. Has full authority for personnel actions. To be a FIRE CAPTAIN typically requires 5 years experience in the related area as an individual contributor. 1 - 3 years supervisory experience may be required.     SUMMARY

    Lead in daily Front of House operations to deliver a 5-Star, 5-Diamond, 3-Michelin Star experience to all guests. Maintain all aspects of the service areas, dining room, and property. Serve as the ambassador of the establishment and play a leadership role.

    ESSENTIAL FUNCTIONS

    1. Able to flawlessly execute the mechanics and standards of service
    2. Is conscious of time-management and order-of-operation skills
    3. Able to confidently speak in depth about property and conduct a kitchen tour
    4. Mastery of etiquette
    5. Can accurately assess a guest’s mood level and take actions accordingly
    6. Exhibits anticipatory service
    7. Comprehensive understanding of MOD and resort-suite functions; create and manage a folio, make dinner reservations, book rooms, menu’s, billing, etc.
    8. Well versed in protocol for potential inspectors
    9. Can effectively delegate to both front of house and back of house teams
    10. Able to serve cheese from the cheese cart and speak confidently about selections
    11. Expert ability to supervise breakfast service
    12. Full understanding of all billing requirements; splitting checks, tock deposits, packages, discounts, and transferring checks
    13. Able to execute tableside presentations; squab carving, Caesar, mini B, pour-over coffee, wine presentation, etc.
    14. Will regularly update guest profile in Tock to build the database
    15. Writes correct and accurate tickets for all tables with all necessary information
    16. Has full daily knowledge of the CIP report
    17. Is directly responsible for the section before and during service
    18. Able to recognize long time guests and friends of The Inn
    19. Takes on additional responsibilities outside of service and improves upon them; floor plan, schedule, CGS, linens, candles, paycom, etc.
    20. Full knowledge of all beverages available
    21. Able to sell bottles of wine accurately and to the guests liking/specification
    22. Full knowledge of the property including details such as; who did this painting, where is this cabinet from, etc., as well as ongoing projects, current publications, recent reviews, etc.
    23. Assists management in staff performance reviews and promotes team members’ growth
    24. Master of all FOH position; can do anything, at any time, for any reason
    25. Able to orchestrate a private event
    26. Responsible for the fulfillment of training information for new staff
    27. Exemplifies leadership, professionalism, positive attitude, and accountability
    28. Utilizes channels of communication between all departments
    29. Embodies the ‘Crisis Solver’ in giving direction and resolving issues
    30. Plays a role in recruiting
    31. Executes precisely in accordance with all Forbes 5-Star standards

     

    QUALIFICATIONS

    Required

    1. Exceptional communication skills
    2. 2 years’ prior fine dining experience
    3. Must be at least 21 years of age
    4. Must be well-groomed and well-presented with no visible tattoos
    5. Must have reliable transportation
    6. Advanced wine knowledge
    7. Must be able to work weekends/holidays and have a flexible work schedule
    8. Mastery of Forbes 5-Star standards

    Desirable

    1. CMS 1 & 2 highly recommended
    2. Ability to communicate in a language other than English, preferably Spanish or French
    3. Certification in alcohol awareness program
    4. Certification in CPR
    5. Prior experience with Resortsuite and Tock
    6. Bartending experience

    SKILLS

    1. Ability to communicate in English both orally and in writing
    2. Strong interpersonal communication skills both verbal and written
    3. Must always be organized and maintain cleanliness of workstation
    4. Ability to speak using clear and professional language
    5. Ability to multi-task in a fast-paced environment
    6. Ability to cross-train across multiple departments and assist when needed
    7. Ability to assist guests with questions about the property, history, and surrounding areas
    8. Ability to hold staff accountable through coaching and counseling
