SUMMARY OF POSITION: The food service manager’s responsibilities will include ensuring that all meals are prepared properly portioned and presented properly. This position ensures all health and safety standards are met along with all required documentation. Supervises and schedules kitchen staff. Resolves any internal or external complaints received. Responsible for preparing ingredients, producing nutritious meals, and cleaning workspaces throughout the day to follow health and safety guidelines.
ESSENTIAL FUNCTIONS:
· Recruiting, training, and managing food service employees.
· Scheduling employee work hours to ensure that all shifts are adequately covered.
· Ensuring that customers are served quality food in a timely manner.
· Regularly inspecting all work areas to ensure compliance with food health and safety regulations.
· Taking inventory of food supplies and other consumables, ordering necessary supplies as needed, and receiving deliveries.
· Ensure that state and local health department, licensing, safety, and nutritional requirements are met.
· Follow standards of personal hygiene, safety, and sanitation and ensure that other staff do the same.
· Create and follow daily, weekly, monthly and annual menus that incorporate standards and nutritional requirements.
· Plan and assist in preparing snacks and meals in accordance with policies and regulations.
· Monitor inventory of food and supplies for the kitchen.
· Keep kitchen, including appliances, cabinets, and all inventory, organized and clean.
· Attend and participate in staff meetings, training, and events as requested.
· Ensure ingredients and final products are fresh.
· Store and ensure that shelter staff store everything properly and in order.
· Maintain a clean and safe work environment, including handling utensils, equipment and dishes.
· Utilize the systems for measuring, tracking, and reporting program effectiveness against program goals and outcomes.
· Cooking as part of the kitchen team on rotation.
· Other duties as assigned.
SKILLS AND QUALIFICATIONS
· Mature Christian who has a heart to work in a ministry environment that reaches out to the poor, homeless, recovering addicted, and mentally ill in a zero-tolerance facility.
· Knowledge of safety procedures, including safe temperatures and foodborne illness prevention.
· Knowledge of knife skills and techniques.
· Understanding of the proper techniques in food preparation.
· Ability to work as part of a team, collaborating on dishes and cleaning.
· Able to work with people in varied circumstances related to homelessness including recovery and mental illness and to treat individuals with dignity and respect in all situations.
· CPR/First Aid certification required.
· A valid driver’s license is required to assist in transporting guests.
