Executive Steward oversees staff responsible for the cleanliness of the kitchen(s) or other food preparation areas. Assists in cleaning equipment or food preparation areas as needed. Being an Executive Steward is responsible for inventory control and kitchen equipment, item management. Ensures compliance with federal, state, and local food safety regulations. Additionally, Executive Steward may require a high school diploma or its equivalent. Typically reports to a supervisor or manager. The Executive Steward supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be an Executive Steward typically requires 3 years experience in the related area as an individual contributor.     JOB PURPOSE:

    The Executive Steward is responsible for overseeing the day-to-day operations and staff of the Stewarding Department, to include inventory management, receiving, dish room, public areas, internal and external cleaning and facility maintenance, sanitation, chemical, and cleanliness standards, systems management, health inspections, safety initiatives, and banquet set-up and tear-down. This role ensures that the kitchen and dining equipment are properly maintained, all storage areas are properly stocked and arranged, and the quality of service provided meets the highest standards. Upholds and promotes the highest standards of cleanliness, safety, and professional conduct.


    PRIMARY DUTIES AND RESPONSIBILITIES:

    • Manages and inventories all equipment, chemicals and cleaning supplies, smallwares, china, glass and silver and ensures consistently adequate and maintained supplies of each.
    • Assists in coordinating purchase needs to properly operate Food & Beverage needs and complete requisitions.
    • Inspects supplies, equipment, and work areas in order to ensure efficient service and conformance to standards.
    • Maintain records of inventory, breakages, orders, and supplies and make recommendations for the purchase of new equipment or supplies as needed to management.
    • Oversees equipment storage and distribution according to established standards.
    • Oversees the cleanliness of the kitchen, dining and public areas, service ware, equipment, and floors, on a daily basis to ensure a high standard of cleanliness and hygiene consistent with all health and safety regulations and standards.
    • Enforces proper use and cleaning of all dish room machinery.
    • Ensures all food holding and transport equipment is in working order.
    • Develops and implements proper cleaning routines and protocols to ensure the work is completed in a timely and efficient manner.
    • Ensures staff are properly trained regarding sanitation, equipment handling and chemical usage.
    • Implements and regularly teaches all required safety and standard operating procedures, updating staff on new cleaning and hygiene techniques.
    • Supervises employees ability to follow loss prevention policies to prevent accidents and control costs.
    • Understands the impact of department's operation on the overall property financial goals and objectives. 
    • Ensure compliance with all applicable laws and regulations including health, food handling, safety, cleanliness, hygiene, sanitation and alcohol awareness standards and prepare for health inspections.
    • Assist with coordinating and communicating with all outside vendors and services, to include the Health Department and all other regulatory departments.
    • Encourages and builds mutual trust, respect, and cooperation among team members.
    • Communicates performance expectations in accordance with job descriptions for each position.

    • Proficiency in computer systems. 
    • Flexibility to work evenings, weekends, and holidays as required by the unit’s operations.

    EDUCATION and/or EXPERIENCE REQUIREMENTS:

    • Associate Degree in a related field preferred.
    • A minimum of five years’ experience in an Executive Steward capacity is preferred.
    • Minimum of five years’ supervisory experience required.
    • General hospitality service and leadership experience preferred
    • Fluent in Spanish highly preferred.
    • Knowledge of all Microsoft Office applications.

    PHYSICAL REQUIREMENTS:

    While performing the duties of this job, the employee is:  

    • Physical ability to push and pull 50 pounds, stand for extended periods, and work with cleaning equipment and chemicals.
    • Regularly required to sit, talk, use repetitive motion, type, and hear.  
    • Frequently required to stand, walk, use hands and fingers to handle and feel, and reach with hands and arms.  
    • Occasionally required to bend, kneel, crouch, climb stairs, and reach overhead.
