    Under the direction of the Director of Food and Beverage, the Executive Chef provides food of the highest quality and variety for all of our guests and Team Members. Coordinate and communicate with all necessary and involved departments for a smooth and orderly flow of activities and workloads throughout the kitchen areas. To operate with fiscal responsibility while generating maximum productivity with minimal resources. 


    SUPERVISORY SCOPE

    • Executive Sous Chef 

    ESSENTIAL DUTIES / RESPONSIBILITIES

    • Responsible for all the back-of-house food operations. 
    • Maintain active and current communication with F&B Department, and all other outlet Managers. 
    • Provide reports regarding the performance of each venue to the Director of Food & Beverage. 
    • Practice and enforce company policies and procedures. 
    • Responsible for the supervision and training of the Executive Sous Chef, Executive Pastry Chef, Executive Steward, Chef De Cuisine and Sous Chefs. 
    • Schedules regular staff meetings with meaningful training agenda. 
    • Able to finish administrative tasks, reports, and Team Member evaluations in a timely fashion. 
    • Responsible for monitoring purchases, product specifications, quality and rotation of food products, end-of-month inventories, waste control procedures for all outlets, menu development for all venues, quality food preparation, and presentation. 
    • Enforce proper food handling procedures by all personnel in the prescribed safe and sanitary manner.
    • Responsible for the financial performance of all kitchen outlets. 
    • To include labor, and food costs and other controllable expenses. 
    • Collaborate with F&B Director to develop annual budget for back-of-house areas.
    • Responsible for overall kitchen safety, cleanliness and sanitation as prescribed by Snoqualmie Casino standards and the Indian Health Department. 
    • The overall appearance and maintenance of fixed kitchen equipment and rolling catering equipment.
    • Other duties as assigned.

    Requirements

    Education and Experience:

    • High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).
    • Culinary Degree or ACF Certification 
    • Five (5) years Culinary experience and three (3) years Supervisory experience in an Assistant Executive Chef level position 

    Skills and Abilities:

    • Working knowledge of hazardous analysis critical control points (HACCP) 
    • Computer experience and knowledge (Excel, Word and E-Mail) 
    • Proven leadership and communication skills 
    • Proven strong organizational skills 
    • Strong leadership and mentoring skills 

    PREFERRED

    Skills and Abilities:

    • Knowledge of kitchen design in relation to fixtures and equipment helpful.

    Snoqualmie Casino exercises Snoqualmie Tribal Member/Native American preference in hiring, in compliance with the Snoqualmie Tribal Employment Rights Ordinance (TERO). You must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission. Pre-employment drug testing is required for all positions. The use of marijuana will not disqualify an applicant for positions in any department other than Transportation (Valet, Driver I). DOT panel testing is required for the Driver position.
