PURPOSE
Line cook is responsible for preparing food to the Executive Chef’s specifications and for setting up stations for menu. Line cook duties consist of assisting the Executive Chef with daily tasks food preparation, kitchen organization, menu preparation, as requested, and clean up.

ESSENTIAL FUNCTIONS
• Set up and stock stations with necessary supplies
• Prepare food for service (e.g. chopping vegetables, butchering meat, preparing sauces)
• Cook menu items in cooperation with the rest of the kitchen staff
• Answer, report and follow Executive Chef’s instructions
• Clean up station and take care of leftover food
• Stock inventory appropriately
• Ensure that quality food comes out simultaneously in a timely fashion
• Comply with nutrition and sanitation regulations and safety standards
• Maintain a positive and professional approach with coworkers and customers
• Monitor product freshness and rotate out old product based on a schedule
• Perform other duties as assigned

MINIMUM QUALIFICATIONS (education, experience, skills)

• Food protection safety certification
• Four years’ experience as a line cook, restaurant cook or prep cook
UNUSUAL PHYSICAL REQUIREMENTS OR RESTRICTIONS
The majority of work is performed in a professional kitchen setting and is generally requiring routine walking, standing, bending, and carrying of items weighing at least 40 lbs. Ability to work on our feet for eight hours or more a day. Travel on small aircraft or ferry may be required.
