- Responsibilities: •Management/Communication Under the direction of the Director of Food Services or leader, conduct morning meetings with staff to delegate daily tasks and discuss any other necessary information concerning the meal of the day. Manage time and the time of others to complete necessary daily requirements. Attending all department meetings and in service training. Evaluate employees in a professional manner. Meet all necessary deadlines. Communicate with feeder schools to take inventory of products and oversee daily operations. Adhere to all Municipal, State and Federal regulations. •Food Production Train staff in safely preparing, serving, and storing food. Train staff in the proper use of all kitchen equipment. Monitor all food prior to service for taste, appearance, temperature, volume, and portion sizes. Communicate with feeder schools daily regarding accurate meal counts, menu information and equipment repairs. Cooperate with nursing to identify and monitor students with allergies or specific dietary needs. •Ordering/receiving Submit orders weekly for menu and ala carte production needs. Work with Warehouse staff to order items for preparation and delivery to other sites. •Sanitation Maintain cleaning schedules for kitchen and production work areas, including all equipment in a safe and sanitary manner. •HACCP procedures. Record and monitor temperature, food, and sanitizing charts. Maintain high standards of personal hygiene and grooming. Follow all food safety standard operating procedures. •Record keeping Maintain daily production records to meet DESE and USDA regulations. Complete and submit all required monthly reports i.e., Production Reports and all program-required paperwork. •Other duties Perform any other related duties as requested by the Director of Food Service or leader. Overall knowledge of all kitchen equipment using safe practices. Physical demands, ability to lift up to 40 lbs.
