      Organizes, leads, and participates in the day-to-day food service operation at a school site or central kitchen that provides services to other locations. Oversees quantity food preparation working from and adapting pre-planned menus. Oversees, directs and coordinates the work of food service staff.       Essential Duties & Responsibilities:
      Organizes, coordinates, and assigns daily workload to food service staff who are attending specific food production stations that include, but are not limited to preparing, assembling, cooking, baking, processing, and packaging a variety of food items.
      Ensures adequate food product to meet projected quantities. Works from reports of projected meal volumes and predetermined menus and portions, to determine the food product to produce the required number of meals in compliance with regulations.
      Provides, coordinates, and assists with the training of food service staff. Works with employees to enhance skills and work organization.
      Prepares and maintains various records and reports on operations and activities including inventory, personnel, sales, meals served, special meal accommodations, monies collected, requisitions, daily reports, work schedules and production sheets.
      Recommends and assists in the implementation of department goals and objectives. Implements policies and procedures.
      Monitors the critical control points when receiving, preparing, serving and storing food to ensure compliance with District HACCP Program and County sanitation requirements.
      Monitors and participates in the serving of nutrition meals to students. Monitors and participates in the preparation of main dishes, sandwiches, salads, salad bars, baked goods, desserts and other food items by following standardized recipes and production sheets to meet required meal components.
      Assures cleanliness and maintenance of equipment and food service supplies.
      Assures proper transport of perishable food items to and between sites.
      Performs a variety of food service duties as needed to assure timely preparation and service.
      Orders perishable food items and supplies after evaluating inventory and projected needs.
      Inspects, leads, and participates in the cleaning and maintenance of food production equipment and kitchen environment.
      Ensures serving and sales areas for students are properly set up and on time.
      Maintains effective working relationships with staff, students and community.
      Attends monthly managers’ meetings and training required by the district.
      Performs other duties as assigned that support the overall objective of the position.

      Qualifications:
      • Knowledge and Skills:
        • The position requires in-depth knowledge of institutional quantity food preparation, cooking methods, procedures, and service. Requires a working knowledge of food and meal production, food storage, production scheduling, business record keeping, kitchen safety and sanitation, and first aid. Requires a working knowledge of modern machines and equipment used in institutional cooking and service lines. Requires working knowledge of inspection techniques for visual appearance, temperature, and cleanliness. Requires knowledge of and ability to use computers to access and record information. Requires sufficient arithmetic skills to compute weights, measures, counts, and portions. Requires sufficient reading skills to interpret menus, ingredient lists, standardized recipes, and preparation instructions. Requires sufficient human relations skill to exhibit positive customer service, convey specific work information and achieve a harmonious work setting.
      • Abilities:
        • Requires the ability to perform the essential duties of the position under general guidance. Requires the ability to independently maintain and monitor a kitchen environment. Must be able to understand and follow Nutrition policies, procedures, rules and regulations. Must be able to orient and train food service staff, perform basic bookkeeping functions, and complete mandated food service reports. Requires the ability to read and understand written directions and recipes and to calculate weights and measurements. Must be able to learn, understand and apply safety and sanitation regulations. Must be able to reconcile daily money transactions and keep records. Must be able to read, write and speak English.
      Education and Experience:
      • High School diploma or GED.
      • Completion of Sanitation Course Certificate
