Banquet Captain
Summary
To supervise all phases of all types of banquet and catering functions; coordinate the activity of the banquet team and their work on a daily and/or event basis, and to ensure that the event’s BEO is executed in the way they have been agreed upon and contracted with the client.
The Banquet Captain assists the Banquet Manager in overseeing the banquet event and ensures that all service standards, departmental policies and event accounting are followed by banquet staff. Act as a single point of contact with the banquet host during the banquet function, ensure all set up and tear down is completed, side work duties are complete, and ending paperwork is done.
In addition to responsibilities during events, the banquet manager handles the banquet administrative duties such as ordering, scheduling, inventory control, performance reviews, and other associated tasks required by the Banquet Manager and Director of Food and Beverage.
DUTIES AND RESPONSIBILITIES:
§ Meet and greet clients.
§ Oversee catered functions, in house and off site, from set up to tear down.
§ Responsible for making the function space visually appealing and presenting the menu offerings for the event.
§ Responsible for the overall sanitation and cleanliness of the work areas, banquet rooms and storage areas.
§ Responsible for the proper usage and good working order of all equipment, furniture and fixtures in the banquet and catering sections in the shift assigned.
§ Responsible for consistently implementing the service standards and operating procedures in the banquet and catering service of the facility.
§ Provide excellent customer service and ensuring that customer needs are met.
§ Should possess an in-depth knowledge of the catering menu; food preparation and presentation.
§ Supervise events and team members throughout service when necessary.
§ Guide the banquet servers in set up of tables and place settings.
§ Attend the weekly BEO meeting and remain familiar with all current and upcoming event details if Banquet Manager is unavailable.
§ Resolve staff and customer concerns quickly and efficiently.
§ Co-ordinate with the culinary staff before, during, and after events.
§ Should be able to work under pressure and also work in long or break shifts.
§ Ensure that sufficient operating guest supplies, beverage supplies and operating equipment for functions are to par.
§ Speak with others using clear and professional language, and answer telephones using appropriate etiquette.
§ Conducts and or performs "Pre-Shift" meetings with staff.
§ Assign sidework and seating charts for staff to follow for every event.
§ Performs and completes additional responsibilities or duties as expressed by the Director of Food and Banquet Manager.
§ Ensures that service fees collected from each event are accurately reported and lists the staff that need to be paid out via the service fees for each event.
§ Close out event in the point of sale.
Qualifications
§ High School Diploma or GED
§ 2 years’ experience in banquet and catering events at a hotel or part of a restaurant banquet team
§ Should have experience in operating POS (point of sales) software.
§ Must be able to stand, sit, or walk for an extended period of time. Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
§ Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
§ Working knowledge of Microsoft office products including EXCEL
