    Job Description
    The Associate Director of Residential Dining will have ultimate responsibility for Residential Dining and will strive to meet student needs, control costs, drive meal plan revenue, and work with the Executive Chef to innovate and market residential dining to existing and prospective students.

    The Associate Director will provide tools and training to effectively implement their vision for the $50M Residential Dining Program and create a Road Map to grow.The Associate Director will be expected to engage with students and the Executive Chef to create menus that students value and speak to our commitments. Further, the Associate Director will work closely with Centralized Services to ensure the appropriate product is sourced, purchased, stored and arrange logistics with the Associate Director of Centralized Services. The Associate Director of Residential Dining will be expected to provide resources to support the highest food quality standards and successfully meet financial targets in each outlet.

    A Culinary Degree and/or Background with Experience leading a 50 million Dollar Residential Dining Program is highly desired for a successful candidate with Syracuse Campus Dining.

    Qualifications
    • Degree in Hotel/Restaurant Management or related field or 15 years of related experience. A Culinary Degree is highly desirable for this position.
    • Experience in a high- volume, multi-unit operation. Must be able to teach and motivate supervisory staff, bargaining unit employees, student management, student employees, and temporary staff, to provide safe, nutritious meals for student customers, all while keeping NYS sanitation standards.

    Job Specific Qualifications
    • Prior experience running high-quality food service in a multi-unit, high-volume food services situation.
    • A comprehensive knowledge of food service trends.
    • Understanding on how to create systems to manage and systematize at scale.

    Responsibilities
    • Manage the operational activities of all residential outlets which currently include 5 residential dining centers and 2 cafes generating annual revenue of ~$50M. Ensure compliance with budget, quality guidelines, and safety.
    • Work with the Executive Chef and Associate Director of Centralized Services to develop appropriate menus, direct food purchases, monitor inventory, forecast future purchases and sales. Develop new and exciting themes and concepts, engage students, monitor, and maintain budgetary goals.
    • Develop budget recommendations, maintain records, review, adjust labor and food costs to achieve departmental goals. Review and approve payroll.
    • Create innovative and engaging training programs for Residential Dining. Organize training sessions that ensure all employees receive and engage in the training. Organize train the trainers for other departmental directors so they effectively and correctly communicate to their staff. Ensure training programs are created in customer service, top 9 allergens plus gluten, cross contact, proper food handling and cooking techniques.
    • Meet individually and with professional staff to define operational goals and objectives. Build peer relationships with Student Engagement, Residential Life, Housing and Assignments and all of Food Services. Pro-actively provide recommendations on future enhancements to the program. Engage with students and encourage employees to do the same. Collect feedback to identify program enhancements. Successfully meet with your direct reports weekly with 30 minute one on ones. Engage with your teams’ direct reports and front-line staff weekly to learn more about their roles and responsibilities.
